Pumpkin Whoopie Pies

- pumpkin Whoopee Pies shopping list
- 1 15 oz. can pure pumpkin, not pie filling shopping list
- 2 C brown sugar shopping list
- 3 eggs shopping list
- 4 C flour shopping list
- 1 C canola oil shopping list
- 1 tsp each: shopping list
- baking powder shopping list
- baking soda shopping list
- ground cloves shopping list
- ground cinnamon shopping list
- salt shopping list
- vanilla shopping list
- Filling: shopping list
- ¼ C cold water shopping list
- 8 oz pkg of cream cheese, plus 2-3 Tbl shortening shopping list
- 2# lb confectioner’s sugar (more sugar will make it fluffier) shopping list
- 1 tsp vanilla shopping list
- Dash of cinnamon or nutmeg to taste shopping list
- confectioners' sugar and amount of water may be adjusted as needed. shopping list
- Makes enough filling for 3 batches shopping list
- An Alternate filling shopping list
- Blend together ½ C softened butter, 1 8oz. Pkg cream cheese until smooth shopping list
- Add 2 c sifted powdered sugar, half of a 7 oz jar marshmallow crème. 1 tsp vanilla, ½ tsp cinnamon and ½ tsp nutmeg. shopping list
How to make it
- Blend well; the eggs, oil, sugar, spices and vanilla
- Stir together all dry ingredients
- Add pumpkin and and dry ingredients alternately to sugar mixture until well blended
- Drop by Tbl or larger onto lightly sprayed baking sheet
- Bake at 350 (325, if dark sheet) for approx. 12 to 15 mins. or until cakes spring back when touched lightly in center
- Yield: about 3 - 4 dozen pies depending on size

These are easy to make and very delicious. My daughter decorated the top with a dob of filling and a pecan. We delivered some to our neighbors, who also loved them.
