This is a very different and very elegant slaw good enough to serve company. Enjoy

Ingredients
  • 1 rotisserie chicken
  • 1-1/2 pound coleslaw mix
  • 1 cup mayonnaise
  • 1/3 cup grated sweet onion
  • 1/3 cup ketchup
  • 4 teaspoons cider vinegar
  • 2 tablespoons sweet relish
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon caraway seeds

Directions
  1. Remove chicken meat from bones and shred or slice.
  2. Whisk mayonnaise, onion, ketchup, vinegar, relish, caraway seeds, salt and pepper.
  3. Add coleslwaw mix and stir to coat.
  4. Transfer to a shallow serving dish and top with chicken.
