Bon Appetit Over The Top Taboli Salad

- 2 cups fresh lemon juice shopping list
- 1-1/3 extra-virgin olive oil shopping list
- 1/4 cup minced garlic (YES, 1/4 cup!) shopping list
- 2 teaspoons salt shopping list
- 2 cups bulgar (cracked wheat, cracked soft-white bulgur wheat) shopping list
- NOTE: I like Steakhouse Produce, taboli Wheat from Bristow, Oklahoma, and it comes in a full pound package, but you may not be able to get it, so a pound comparable to this will be fine. shopping list
- 6 medium cucumbers, (about 4 lbs), peeled seeded, chopped shopping list
- 4 cups chopped fresh parsley shopping list
- 3-1/2 cups chopped green onions shopping list
- 3 cups chopped red bell pepper shopping list
- 1 cup chopped fresh dill shopping list
- 2/3 cup fresh mint shopping list
How to make it
- Whisk lemon juice, olive oil, garlic, and salt in a very large bowl to blend
- Season dressing to taste with pepper
- Mix in bulgar
- Mix remaining ingredients in medium bowl
- Season with salt and pepper
- SPOON ATOP BULGAR, (DO NOT MIX)
- Cover and chill overnight or up to 2 days
- Toss salad
- Transfer to serving bowl or bowls
- This is truly low calorie and very nutritious + DELICIOUS!
- NOTE: there are no tomatoes in this recipe, but you could "add as
- you go" :)
