Italian Cream Cake

- 1 white cake mix shopping list
- 1 c. buttermilk shopping list
- 2 large egg whites shopping list
- 1 large egg shopping list
- 1/4 c. oil shopping list
- 3 T. light brown sugar shopping list
- 1/4 c. flaked coconut shopping list
- 2 T. chopped pecans shopping list
- CREAM CHEESE FROSTING: shopping list
- 8 oz cream cheese, softened shopping list
- 2 T. margarine shopping list
- 1 box (16 oz) powdered sugar shopping list
- 1 t. vanilla shopping list
How to make it
- Preheat oven to 350 degrees. Coat a 9 x 13 pan with nonstick cooking spray (or lightly, with shortening) and dust with flour.
- In a large mixing bowl, combine cake mix, buttermilk, egg whites, whole egg and oil, beating until well mixed.
- In a small mixing bowl, combine brown sugar, coconut, and pecans together; set aside
- Spread half the batter in the pan, sprinkle with brown sugar mixture, and carefully top with remaining batter, spreading it out.
- Bake for 30 minutes, or until a toothpick inserted into center comes out clean. Let cool and spread with cream cheese frosting.
- CREAM CHEESE FROSTING:
- In a mixing bowl, beat cream cheese and margarine together. Blend in sugar, mixing well. Add the vanilla, mixing well again.
