Ingredients
  • (This makes about 6 to 8 Servings. . .Depending on how big of eaters your family has)
  • 1/4 c. Orange Juice
  • 2 T. plus 1 t. olive oil, divided
  • 2 t. Thyme Leaves, divided
  • 2 pounds Salmon Fillets
  • 1 T. Brown Sugar
  • 1 T. Smoked Paprika
  • 1 t. Cinnamon
  • 1/2 t. Sea Salt
  • 1 t. Orange Peel
  • 1 bag (about 10 ounces) Baby Spinach Leaves

Directions
  1. Mix orange juice, 2 T. of the oil and 1 t. of the thyme in small bowl. Place salmon in large glass dish. Add marinade; turn to coat well.
  2. Cover. Refrigerate 30 minutes or longer for extra flavor.
  3. Mix sugar, smoked paprika, cinnamon, orange peel, remaining 1 t. thyme and sea salt in small bowl. Remove salmon from marinade.
  4. Place in greased foil-lined baking pan. Discard any remaining marinade. Rub top of salmon evenly with smoked paprika mixture.
  5. Roast salmon in a preheated 400 degree oven 10 to 15 minutes or until fish flakes easily with a fork. Meanwhile, heat remaining 1 t. olive oil in large skillet on medium heat. Add spinach; cook and stir 2 minutes or until wilted. Serve salmon over spinach.
