Smoked Paprika Roasted Salmon with Wilted Spinach

- (This makes about 6 to 8 Servings. . .Depending on how big of eaters your family has) shopping list
- 1/4 c. orange juice shopping list
- 2 T. plus 1 t. olive oil, divided shopping list
- 2 t. thyme leaves, divided shopping list
- 2 pounds salmon fillets shopping list
- 1 T. brown sugar shopping list
- 1 T. smoked paprika shopping list
- 1 t. cinnamon shopping list
- 1/2 t. sea salt shopping list
- 1 t. orange peel shopping list
- 1 bag (about 10 ounces) baby spinach leaves shopping list
How to make it
- Mix orange juice, 2 T. of the oil and 1 t. of the thyme in small bowl. Place salmon in large glass dish. Add marinade; turn to coat well.
- Cover. Refrigerate 30 minutes or longer for extra flavor.
- Mix sugar, smoked paprika, cinnamon, orange peel, remaining 1 t. thyme and sea salt in small bowl. Remove salmon from marinade.
- Place in greased foil-lined baking pan. Discard any remaining marinade. Rub top of salmon evenly with smoked paprika mixture.
- Roast salmon in a preheated 400 degree oven 10 to 15 minutes or until fish flakes easily with a fork. Meanwhile, heat remaining 1 t. olive oil in large skillet on medium heat. Add spinach; cook and stir 2 minutes or until wilted. Serve salmon over spinach.
