Quick and easy southwestern salad

- 1/2 cup chopped yellow onion shopping list
- 1 lb lean ground beef shopping list
- 1 tbl chili powder shopping list
- 2 tsp Dry oregano shopping list
- 1/2 tsp ground cumin shopping list
- 1 cup canned kidney beans drained and rinsed shopping list
- 1 15 oz can chickpeas drained and rinsed shopping list
- 1 tomato diced shopping list
- 2 cups romaine lettuce (I shread mine) shopping list
- 1/2 cup cheddar cheese (sharp or extra sharp) shopping list
How to make it
- Cook ground beef and onions in a large skillet until the beef no longer remains pink. Drain off fat.
- Stir chili powder, oregano, and cumin into beef mixture and cook for 1 minute.
- Add beans, chickpeas, and tomatoes. Mix gently to combine.
- Combine lettuce topped with cheese on 4 individual plates
- Add 1/2 cup of beef mixture on top of lettuce and cheese.
- For a group salad add lettuce in a large bowl, top with cheese and lay mixture on top
