Quick And Easy Southwestern Salad Recipe

Ingredients
  • 1/2 cup chopped yellow Onion
  • 1 lb Lean ground beef
  • 1 tbl Chili powder
  • 2 tsp Dry oregano
  • 1/2 tsp Ground cumin
  • 1 cup Canned kidney beans drained and rinsed
  • 1 15 oz can chickpeas drained and rinsed
  • 1 tomato diced
  • 2 cups romaine lettuce (I shread mine)
  • 1/2 cup cheddar cheese (sharp or extra sharp)

Directions
  1. Cook ground beef and onions in a large skillet until the beef no longer remains pink. Drain off fat.
  2. Stir chili powder, oregano, and cumin into beef mixture and cook for 1 minute.
  3. Add beans, chickpeas, and tomatoes. Mix gently to combine.
  4. Combine lettuce topped with cheese on 4 individual plates
  5. Add 1/2 cup of beef mixture on top of lettuce and cheese.
  6. For a group salad add lettuce in a large bowl, top with cheese and lay mixture on top
