Zucchini Beef Casserole Recipe
Another tried and true delight that is sure to please the palate. I have taken this to church potlucks and office potlucks and everyone loves it. Hope you do too.

Ingredients
  • 6 cups zucchini
  • 1 pound lean ground beef
  • 1/2 cup chopped white onions
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 1/2 teaspoon oregano
  • 1/4 cup margarine
  • 1/4 cup flour
  • 1 cup grated cheddar cheese
  • 2 cups milk
  • 1/4 cup grated Parmesan cheese

Directions
  1. Parboil sliced zucchini for 5 minutes.
  2. Fry beef then add onions and fry until limp.
  3. Add salt, pepper and oregano.
  4. Melt margarine then add flour and milk and cook stirring until thick.
  5. Add cheese.
  6. Layer in buttered casserole the zucchini, hamburger and cheese sauce.
  7. Repeat once more then sprinkle top with Parmesan cheese.
  8. Bake at 350 for 30 minutes.

Thanks tried this yesterday and used ground turkey instead of the beef and omitted oregano and added cayenne and lots of garlic. The crusty parmesan top is a nice contrast to the mixture of zucchini. Thanks for the recipe it was deeelish, another make again dinner!
