This is two of my favorites, steak and Mexican. It's also good served with mashed potatoes if you don't want the rice.

Ingredients
  • 1 1/4 lbs. tenderized round steak, cut into serving pieces
  • 2 tablespoons butter or margarine
  • Salt and pepper
  • 1 jar (12oz) picante sauce (mild, medium, or hot)
  • 1 can (4oz) chopped green chilies
  • 1/2 cup (2oz) shredded Monterey Jack cheese
  • ----------Lemon Pilaf----------
  • 1 cup sliced celery
  • 1 bunch green onions with some of green tops, sliced
  • 2 tblespoon butter
  • 2 cups cooked brown rice or long-grain white rice
  • 1 tablspoons grated lemon peel (from 2 lemons)
  • Salt and pepper

Directions
  1. Preheat oven to 350.F
  2. In a large skillet, brown steak pieces lightly in the butter. Transfer to a shallow 2-quart baking dish
  3. Sprinkle with salt and pepper.
  4. Mix picante sauce and chilies and pour over meat.
  5. Cover tightly with foil.
  6. Bake for 40 minutes.
  7. Uncover. sprinkle with cheese. Put back in oven for 5 minutes more to melt cheese. Serve with the Lemon Pilaf.

  9. In medium skillet, saute in butter celery and geen onions about 10 minutes. Add the cooked rice, grated lemon peel, and salt and pepper to taste. Heat, stirring for 2 to 3 minutes.
