Ingredients
  • 2 avocados, mashed (I prefer diced)
  • 3 tablespoons green chilies, diced
  • 2 cups Monterey jack cheese, grated (I add sharp as well like cheddar, longhorne)
  • Butter, melted
  • 2 tablespoons onion, diced (I saute' till carmelized)
  • 3/4 cup bacon, cooked crisp and crumbled
  • 4 flour tortillas

Directions
  1. Combine avocados, chilies, cheese, onion and bacon, mixing well.
  2. Divide mixture in fourths, and spread mixture on each tortilla,
  3. leaving a 1/4-inch edge. Fold each tortilla in half and crimp
  4. edges. Brush a large skillet and tortillas with melted butter.
  5. Fry until golden brown or until cheese melts. Cut each into 4
  6. wedges and serve immediately.
  7. Makes 16.
  8. I serve this with sour cream and a salsa of some kind like corn.
