Ingredients
  • 4 Boneless, Skinless Chicken Breasts, pounded to desired thickness
  • One package (8oz.) Frozen Broccoli Spears
  • 1 tbsp. Roasted Garlic Dressing or Garlic Powder (or 3 cloves roasted garlic)
  • 2 tsp. Dried Parsley or 1 tsp. Chopped Fresh Parsley
  • 8 oz. Shredded Mozzarella Cheese
  • 2 tbsp. Olive Oil
  • 1/2 c. Dry White Wine

Directions
  1. Pound out chicken breasts to desired thickness.
  2. Thaw broccoli spears in colander under hot running water.
  3. Heat oil in heavy skillet pan.
  4. Season with garlic dressing, garlic powder or spread roasted garlic on all sides of chicken breasts.
  5. Saute chicken in pan on medium heat until browned on all sides and cooked through.
  6. Add broccoli and 1/4 c. white wine - cover to steam broccoli 5 minutes.
  7. Pile broccoli on top of chicken breasts and smother with mozzarella cheese - add additional 1/2 c. white wine and cover again until cheese is melted and gooey - serve with your favorite pasta or risotto - enjoy!

I know Mulberry's, too, and I was so upset when it closed! For years I tried to re-create their Chicken Mulberry and couldn't get it right. Yours might be the answer I've been searching for! Can't wait to try it.
