Pineapple Chicken Recipe

Pineapple Chicken Recipe
The chili sauce was listed in the directions, but not in the ingredients in the original recipe. I did a "guesstimate" at 1/4 cup and adjusted to taste. This reminds me of the Pineapple Chicken from the 60's that my mom used to make.

  • 1/3 cup flour
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/8 t. paprika
  • 6 t. oil, divided
  • 1 garlic clove, minced
  • 1/4 cup chopped onion
  • 1/3 cup chopped green bell pepper

  • 3/4 t. soy sauce
  • chili sauce (I started with 1/4 cup and adjusted to taste)
  • 1 1/2 cups pineapple juice

Directions
  1. Cut chicken into bite sized chunks. Roll in flour that has been seasoned with salt, pepper and paprika. Sauté in 5 T. of oil until lightly brown. Place in a 2 quart greased casserole dish. 4. Mel's notes: January 11, 2007 - The chili sauce wasn't listed in the ingredients, so I don't know exactly how much to use. I started with 1/4 cup and adjusted to taste. This is great! I would like pineapple chunks and a little vinegar to make it a real sweet and sour. We made it with boneless chicken thighs and it was very tender and fairly easy to fix.
