How to make it

  • Cut chicken into bite sized chunks. Roll in flour that has been seasoned with salt, pepper and paprika. Sauté in 5 T. of oil until lightly brown. Place in a 2 quart greased casserole dish. Add 1 T. of oil to pan and sauté garlic, onion and green pepper for 5 minutes. Add mustard, soy sauce, chili sauce and pineapple juice. Bring to a boil and simmer for 5 minutes. Pour over chicken and bake, covered in a preheated 350 oven for 45 minutes. Serves 4 to 6

  • Mel's notes: January 11, 2007 - The chili sauce wasn't listed in the ingredients, so I don't know exactly how much to use. I started with 1/4 cup and adjusted to taste. This is great! I would like pineapple chunks and a little vinegar to make it a real sweet and sour. We made it with boneless chicken thighs and it was very tender and fairly easy to fix.
