Island Style Grilled Turkey Tenderloin Recipe
I love turkey tenderloins, and buy them in the double pack when on sale and freeze. This marinade has an Island flavor and you can add more spice if desired. Hubby doesn't like hot but he likes the sweetness inherent in this marinade.

Ingredients
  • 4 pounds turkey breast tenderloins
  • 3 tablespoons sugar free peach jam
  • 2 large green onions, green and white part minced
  • 4 teaspoons minced garlic, 2 large cloves about
  • 1 teaspoon hot pepper sauce
  • 1/2 teaspoon of dried mint crushed
  • 1/4 dried chipotle powder
  • 1/2 teaspoon salt
  • 1 tablespoon of rum
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon soy sauce

Directions
  1. Spray unheated grill rack with nonstick cooking spray.
  2. Place jam, green onions, garlic, hot pepper sauce, chipotle pepper, salt, rum, ime juice, lime zest and soy sauce in a blender and puree.
  3. Coat the tenderloins with the puree and marinate in the refrigerator for four hours.
  4. Thank goodness for plastic bags, just make sure you put it in a bowl in case of leaks.
  5. Place tenderloins on rack over medium-hot grill. Turn frequently for even cooking and browning. Cook tenderloins for about 20 minutes or until meat is no longer pink.
  6. Allow to rest for 10 minutes before slicing.
