Very comforting vegetable and cheese one-dish, perfect for brunch or as a light supper. Endives can be easily substituted by lettuce heads.

Ingredients
  • 4 endives
  • 1 cup cooked turkey breast or sweet ham, finely chopped
  • 1 cup Cheddar, Gouda or Emmental cheese, sliced or grated
  • ½ cup heavy cream or cream fräiche
  • ¼ cup bread crumbs
  • Bunch of parsley finely chopped
  • Salt and pepper to taste

Directions
  1. Heat oven to 400ºF.
  2. Steam endives until cooked but firm. Drain. When cool cut lengthwise in two.
  3. Arrange endives in the bottom of a greased baking pan. Salt and pepper to taste.
  4. Add chopped turkey breast or ham, cheese and heavy cream.
  5. Sprinkle with bread crumbs and parsley. Salt and pepper again.
  6. Bake until cheese is melted and bread crumbs are golden.
  7. Serve hot.
