Tomato Garlic Penne Recipe
Perfect as a side dish to a flavorful main course, this penne is spiced *just* enough to give it a Gold Star in side dishes!

Ingredients
  • 2 fresh Roma tomatoes (diced)
  • 4 chopped natural sun-dried tomatoes
  • 2/3 cup chopped fresh chives
  • 16 oz organic Penne pasta
  • 2 tbsp extra virgin olive oil
  • 3 tbsp butter
  • 2 chopped garlic cloves

Directions
  1. Sautee garlic, butter, olive oil until the garlic is tender and "smooshes" well.
  2. Cook penne according to package, reducing time until pasta is "al dente".
  3. Combine the Roma tomatoes, sun-dried tomatoes, chives, pasta and butter/oil/garlic into one pan. Stir well.
  4. Set on low/low-medium heat until pasta has finished cooking.
  5. This pasta would be a bit plain by itself - so make sure you have a flavorful main course to go with it!
