Chicken Fricassee Recipe
This is a very quick dish, and very tasty too. The creme fraiche gives it a nice tang.

Ingredients
  • 2 small chicken breasts, cut into strips
  • 1 red pepper, de-seeded and cut into chunks (not too small)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, crushed
  • 2 tablespoons (30ml) creme fraiche
  • 1 bay leaf
  • a large pinch of dried thyme
  • 1 cup (0.5 pint) hot chicken stock

Directions
  1. Heat a generous drizzle of olive oil in a frying pan to a medium heat, and fry the pepper and onion for 5 mins.
  2. Add the garlic, and fry for another 2 mins.
  3. Add the chicken and fry for 4 minutes, turning the pieces occasionally.
  4. Add the hot stock, thyme and bay leaf. Allow the stock to bubble away until it is reduced by about two thirds.
  5. Add the creme fraiche. Heat through for a final 3 minutes. Check that the chicken is cooked. Check the seasoning.
  6. Serve with rice and peas.
