How to make it

  • Heat a generous drizzle of olive oil in a frying pan to a medium heat, and fry the pepper and onion for 5 mins.
  • Add the garlic, and fry for another 2 mins.
  • Add the chicken and fry for 4 minutes, turning the pieces occasionally.
  • Add the hot stock, thyme and bay leaf. Allow the stock to bubble away until it is reduced by about two thirds.
  • Add the creme fraiche. Heat through for a final 3 minutes. Check that the chicken is cooked. Check the seasoning.
  • Serve with rice and peas.
