Chicken Fricassee

- 2 small chicken breasts, cut into strips shopping list
- 1 red pepper, de-seeded and cut into chunks (not too small) shopping list
- 1 medium onion, finely chopped shopping list
- 2 cloves of garlic, crushed shopping list
- 2 tablespoons (30ml) creme fraiche shopping list
- 1 bay leaf shopping list
- a large pinch of dried thyme shopping list
- 1 cup (0.5 pint) hot chicken stock shopping list
How to make it
- Heat a generous drizzle of olive oil in a frying pan to a medium heat, and fry the pepper and onion for 5 mins.
- Add the garlic, and fry for another 2 mins.
- Add the chicken and fry for 4 minutes, turning the pieces occasionally.
- Add the hot stock, thyme and bay leaf. Allow the stock to bubble away until it is reduced by about two thirds.
- Add the creme fraiche. Heat through for a final 3 minutes. Check that the chicken is cooked. Check the seasoning.
- Serve with rice and peas.
