Hot Pepper Chicken Recipe
Another one I have not had the opportunity to try yet. I obtained this from a garage sale this past weekend and immediately flagged it as a must try. Please let me know if you try it before I get a chance to. Enjoy.

Ingredients
  • 4 boneless skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon cornstarch
  • 4 fresh hot peppers
  • 1 tablespoon brown sugar
  • 1 tablespoon cider vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoons wine
  • 1/2 cup water
  • 1 cup peanuts
  • 2 tablespoons oil

Directions
  1. Cut chicken into 1" squares.
  2. Dredge in cornstarch and salt on a piece of wax paper.
  3. Allow pieces to dry individually on wax paper about 20 minutes.
  4. Remove seeds from fresh peppers then coarsely cut into strips and reserve.
  5. Mix sugar, vinegar, soy sauce and wine together in a small bowl and reserve.
  6. Heat oil in wok until smoking then add dredged chicken and stir fry on all sides.
  7. Add sugar, vinegar and hot peppers then place cover over wok.
  8. Add 1/2 cup water and cook over medium heat 5 minutes.
  9. Self gravy should form in the bottom of wok.
  10. Stir chicken in gravy so it will cook in gravy.
  11. Sprinkle in 1 cup of peanuts and mix thoroughly.
