Anchovy Canapes

- 4 ounces canned flat anchovy fillets shopping list
- 2 medium garlic cloves chopped fine shopping list
- 1 teaspoon tomato paste shopping list
- 1-1/2 tablespoons olive oil shopping list
- 2 teaspoons lemon juice or red wine vinegar shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 8 slices French bread shopping list
- 1 teaspoon finely chopped parsley shopping list
How to make it
- Drain anchovies and place in heavy bowl with garlic and tomato paste.
- Mash mixture to a smooth puree.
- Dribble in oil a few drops at a time stirring until mixture becomes thick and smooth.
- Stir in the lemon juice and pepper.
- Preheat oven to 500.
- Brown bread lightly on one side.
- While bread is still warm spread untoasted side with anchovy mixture.
- Arrange bread on a baking sheet and bake 10 minutes.
- Sprinkle with parsley and serve at once.
