How to make it

  • Drain anchovies and place in heavy bowl with garlic and tomato paste.
  • Mash mixture to a smooth puree.
  • Dribble in oil a few drops at a time stirring until mixture becomes thick and smooth.
  • Stir in the lemon juice and pepper.
  • Preheat oven to 500.
  • Brown bread lightly on one side.
  • While bread is still warm spread untoasted side with anchovy mixture.
  • Arrange bread on a baking sheet and bake 10 minutes.
  • Sprinkle with parsley and serve at once.
