How to make it

  • Preheat oven to 450.
  • In a large skillet sauté chives in the oil for 2 minutes over medium heat.
  • Raise the heat to high then add the scallops and cook for two more minutes.
  • Add rum, Tabasco, ginger and paprika then cook two more minutes and remove from heat.
  • Melt butter in a 2 quart saucepan then add flour, salt and pepper.
  • Blend well then add warm milk stirring constantly until it bubbles and thickens.
  • Add cheese then stir until melted and mix into the scallops.
  • Put in a medium baking dish then sprinkle with parsley and bake at 450 for 10 minutes.
