Gratin Sea Scallop Calypso

- 2 tablespoons finely chopped chives shopping list
- 2 tablespoons olive oil shopping list
- 1 pound sea scallops shopping list
- 2 tablespoons rum shopping list
- 2 teaspoons Tabasco sauce shopping list
- 1/4 teaspoon ginger powder shopping list
- 1/2 teaspoon paprika shopping list
- 3 tablespoons butter shopping list
- 3 tablespoons flour shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 cup warm milk shopping list
- 2 tablespoons grated swiss cheese shopping list
- 1 tablespoon finely chopped parsley shopping list
How to make it
- Preheat oven to 450.
- In a large skillet sauté chives in the oil for 2 minutes over medium heat.
- Raise the heat to high then add the scallops and cook for two more minutes.
- Add rum, Tabasco, ginger and paprika then cook two more minutes and remove from heat.
- Melt butter in a 2 quart saucepan then add flour, salt and pepper.
- Blend well then add warm milk stirring constantly until it bubbles and thickens.
- Add cheese then stir until melted and mix into the scallops.
- Put in a medium baking dish then sprinkle with parsley and bake at 450 for 10 minutes.
