Another estate sale purchased recipe, I have not had the good fortunte of trying yet. Just got my hands on this one this past week but fully intend to try soon. Enjoy

Ingredients
  • 2 tablespoons finely chopped chives
  • 2 tablespoons olive oil
  • 1 pound sea scallops
  • 2 tablespoons rum
  • 2 teaspoons Tabasco sauce
  • 1/4 teaspoon ginger powder
  • 1/2 teaspoon paprika
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup warm milk
  • 2 tablespoons grated Swiss cheese
  • 1 tablespoon finely chopped parsley

Directions
  1. Preheat oven to 450.
  2. In a large skillet sauté chives in the oil for 2 minutes over medium heat.
  3. Raise the heat to high then add the scallops and cook for two more minutes.
  4. Add rum, Tabasco, ginger and paprika then cook two more minutes and remove from heat.
  5. Melt butter in a 2 quart saucepan then add flour, salt and pepper.
  6. Blend well then add warm milk stirring constantly until it bubbles and thickens.
  7. Add cheese then stir until melted and mix into the scallops.
  8. Put in a medium baking dish then sprinkle with parsley and bake at 450 for 10 minutes.
