Double Chocolate Chunk Pudding Cake

- TOPPING shopping list
- 1 cup light brown sugar shopping list
- 3/4 cup water shopping list
- 3 tbsp Fry's cocoa shopping list
- 2 tbsp butter shopping list
- PUDDING shopping list
- 2 cups all purpose flour shopping list
- 1 tbsp baking powder shopping list
- 1 tsp salt shopping list
- 1/2 cup softened butter shopping list
- 1 cup white sugar shopping list
- 2 eggs beaten shopping list
- 3/4 cup warm milk shopping list
- 1 cup finely chopped semi-sweet chocolate (may use chocolate chips) shopping list
How to make it
- ~TOPPING~
- Combine brown sugar with water, cocoa and butter in a medium sauce pan over medium-high heat
- Bring to a boil and simmer 5 min
- cool slightly
- ~PUDDING~
- Preheat oven to 350F
- Grease ten 1/2 cup custard cups or ramekins and place on baking sheet
- Stir flour with baking powder and salt
- Set aside
- Beat butter with sugar until fluffy
- Beat in eggs
- Blend flour into butter mixture in 3 additions, alternating with milk and scraping the side of the bowl as needed.
- Fold in chopped chocolate
- Divide batter among the prepared dishes
- Divide topping over batter (topping will sink when put in oven)
- Bake for 25 minutes or until tester inserted in centre comes out clean.
- Cool slightly; turn out onto plates
- Makes 10 servings

Made this for the guys tonight! They loved it. I made mine in a 8x8 pan and it took almost an hour to bake. Next time I'm going to double the sauce and use a 9x13 instead. Thanks!
