Sweet and Sour Cabbage Soup

- 3 cups red cabbage, shredded shopping list
- 1 onion, sliced thin shopping list
- 1 granny smith apples - peels and cores removed, cut into slices shopping list
- 1/3 cup raisins shopping list
- 4 cups beef stock shopping list
- 1/4 cup apple butter shopping list
- 1/2 cup cider vinegar shopping list
- 1/4 cup packed brown sugar shopping list
- 1/4 tsp ground black pepper shopping list
- 1/4 tsp celery seed shopping list
- 2 tbsp butter shopping list
- 1/2 tsp salt shopping list
How to make it
- In the butter, saute the apple and onion, in a large saucepan, until tender. Add in the cabbage and saute for an additional 5 minutes.
- Pour in the stock and vinegar then bring to a boil. Lower the heat and mix in the raisins, sugar, celery seed, salt and pepper. Then, simmer, uncovered, for 1 hour. Stir in the apple butter and serve.
