Sweet And Sour Cabbage Soup Recipe
Sweet tasting, from the apples, and sour from the vinegar. A unique but quite tasty combination. Add a sliced apple and scoop of sour cream for garnish, and its just as beautiful as it is delicious!

Ingredients
  • 3 cups red cabbage, shredded
  • 1 onion, sliced thin
  • 1 Granny Smith apples - peels and cores removed, cut into slices
  • 1/3 cup raisins
  • 4 cups beef stock
  • 1/4 cup apple butter
  • 1/2 cup cider vinegar
  • 1/4 cup packed brown sugar
  • 1/4 tsp ground black pepper
  • 1/4 tsp celery seed
  • 2 tbsp butter
  • 1/2 tsp salt

Directions
  1. In the butter, saute the apple and onion, in a large saucepan, until tender. Add in the cabbage and saute for an additional 5 minutes.
  2. Pour in the stock and vinegar then bring to a boil. Lower the heat and mix in the raisins, sugar, celery seed, salt and pepper. Then, simmer, uncovered, for 1 hour. Stir in the apple butter and serve.
