Ingredients

How to make it

  • trim and wash okra
  • mix 3 tablespoons of salt with the vinegar
  • add to okra and let stand for half an hour
  • brown onions
  • brown lamb
  • add half cup of water and a little salt
  • cover and cook for 20 min
  • rinse okra well
  • layer the tomatoes and okra over the lamb starting with tomato
  • place the peppers on the top
  • pour over lemon juice
  • 1 tsp salt and about 400ml water
  • cover and cook on med heat for 50-60min.

    I am cooking this tonite for my supper with the tinest sweetest bamya from my local pazar here in Uskudar, (Istanbul), on Monday. I have both lamb and mutton (left from Kurban Bayram last year, no I am not Muslim, I am English), but I had some kofte meat in the fridge. I have added cumin and all spice to this and will make small kofte to add to the okra at end of cooking. I will serve with makarna(pasta), which is traditional for Egypt, so a mix of Egyptian and Turkish cuisine-::))) Afiyet Olsun!!

    Nice to see someone using mutton these days, a very under rated meat..a very helpful hint about the okra too, one of my favourite veggies..:-))
