Ingredients
  • 750 g Okra
  • olive oil
  • 2 large onions chopped
  • 3 large tomatoes sliced
  • 200g Mutton / lamb cut into pieces
  • 3 green peppers cut into chunks
  • 1 lemon
  • salt
  • 1/2 cup vinegar (the vinegar is to take away the sliminess of the okra so if you like the slime then omit the vinegar)

Directions
  1. trim and wash okra
  2. mix 3 tablespoons of salt with the vinegar
  3. add to okra and let stand for half an hour
  4. brown onions
  5. brown lamb
  6. add half cup of water and a little salt
  7. cover and cook for 20 min
  8. rinse okra well
  9. layer the tomatoes and okra over the lamb starting with tomato
  10. place the peppers on the top
  11. pour over lemon juice
  12. 1 tsp salt and about 400ml water
  13. cover and cook on med heat for 50-60min.

Nice to see someone using mutton these days, a very under rated meat..a very helpful hint about the okra too, one of my favourite veggies..:-))
