Sloppy Lentils

- 1 tbsp. olive oil shopping list
- 1/2 yellow onion, diced shopping list
- 1/2 red pepper, diced shopping list
- 2-3 cloves garlic, minced shopping list
- 1/2 cup red lentils shopping list
- 1 cup vegetable broth shopping list
- 1 tbsp tamari shopping list
- 1 tbsp dry mustard shopping list
- 1 tbsp. tomato paste shopping list
- 1 tsp. crushed oregano shopping list
- 1/2 tsp. sugar shopping list
- big squirt of ketchup shopping list
- 3/4 cup kale or other greens, rough chop (optional) shopping list
- Dash cayenne pepper shopping list
- 1/ 4-1/2 cup water, as needed shopping list
- For extra flavor add garlic and onion powder shopping list
How to make it
- Heat oil in pan and sauté the onion and peppers until beginning to caramelize.
- Add the garlic and cook for about 30 seconds more.
- Add lentils and tomato paste. Stir until well coated.
- Deglaze the pan with the vegetable broth, and add the remaining seasonings.
- Bring to a simmer and cook, covered, for about 30 minutes, stirring occasionally.
- Add greens and cook until lentils are done and the liquid is completely absorbed, about another 20 minutes.
- Add water, as needed, throughout the cooking process. It should be very thick like the consistency of refried beans. If you prefer, you can mash up the lentils a bit, but I don't bother.
- Serve on whole wheat buns or in a bowl with chips.
