Sloppy Lentils Recipe
The vegetarian version of sloppy joes. Really easy, really tasty. The ingredient list seems long, but you should have most of them in your pantry. Once you have the basic recipe you can use different vegetables and seasonings.

Ingredients
  • 1 tbsp. olive oil
  • 1/2 yellow onion, diced
  • 1/2 red pepper, diced
  • 2-3 cloves garlic, minced
  • 1/2 cup red lentils
  • 1 cup vegetable broth
  • 1 tbsp tamari
  • 1 tbsp dry mustard
  • 1 tbsp. tomato paste
  • 1 tsp. crushed oregano
  • 1/2 tsp. sugar
  • big squirt of ketchup
  • 3/4 cup kale or other greens, rough chop (optional)
  • Dash cayenne pepper
  • 1/ 4-1/2 cup water, as needed
  • For extra flavor add garlic and onion powder

Directions
  1. Heat oil in pan and sauté the onion and peppers until beginning to caramelize.
  2. Add the garlic and cook for about 30 seconds more.
  3. Add lentils and tomato paste. Stir until well coated.
  4. Deglaze the pan with the vegetable broth, and add the remaining seasonings.
  5. Bring to a simmer and cook, covered, for about 30 minutes, stirring occasionally.
  6. Add greens and cook until lentils are done and the liquid is completely absorbed, about another 20 minutes.
  7. Add water, as needed, throughout the cooking process. It should be very thick like the consistency of refried beans. If you prefer, you can mash up the lentils a bit, but I don't bother.
  8. Serve on whole wheat buns or in a bowl with chips.

Yum, this sounds like total veggie comfort food. I've been trying to avoid eating processed soy as my vegetarian comfort food catch-all, so it's great to find a lentil-based recipe! I will definitely be trying this one out soon.
