Perfect side for so many dishes - cheesy, herb popovers - light and flavorful. I substitute different cheeses and herbs, based on the meal.

Just leave the popovers in the pan, and just take a knife around the edge of the popover and 'squish' to the center, to open it up a bit. Turn off the oven, and put them back into the hot oven for 10 minutes. This allows them to dry out a bit, for a wonderful texture! Enjoy!
