Spinach And Bacon Quiche Recipe
This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Clovers Estate in Arlington, Texas in 1989.

Ingredients
  • 6 large eggs beaten
  • 1-1/2 cups heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 cups chopped fresh baby spinach packed
  • 1 pound bacon cooked and crumbled
  • 1-1/2 cups shredded Swiss cheese
  • 1 refrigerated 9" pie crust fitted to a glass pie plate

Directions
  1. Preheat oven to 375.
  2. Combine eggs, cream, salt and pepper in a blender.
  3. Layer spinach, bacon and cheese in the bottom of the pie crust.
  4. Pour egg mixture on top.
  5. Bake 40 minutes until egg mixture is set then cut into 8 wedges.

Just like mine. It's really good and easy. Use 1 1/2 cups frozen spinach, microwaved for 2-3 minutes, drained well, if you prefer. Also cheese can be cheddar, gruyere or combo
