Spinach Stuffed Fish Rolls Recipe

Ingredients
  • 1 lb flounder, orange roughy or sole (4 fillets)
  • 1 ½ C firmly packed spinach leaves
  • ¼ tsp garlic salt
  • 1/3 C light mayo (or not)
  • ½ tsp Dijon mustard
  • ¼ C garlic croutons, crushed
  • Lemon wedges if desired

Directions
  1. Heat oven to 400
  2. Spray 8 inch square(2 quart) glass baking dish with cooking spray
  3. Place spinach on fillets, sprinkle with garlic salt, roll up tightly
  4. Place seam side down in baking dish
  5. In small bowl combine mayo and mustard, spoon evenly onto each roll
  6. Sprinkle with crushed croutons
  7. Bake uncovered 20 to 25 minutes, depending on thickness of fillets
  8. Serve with lemon wedges
  9. 4 Servings
  10. All prep can be done in advance the same day, covered and refrigerated
  11. Bring to room temp before baking or allow an extra 5 -10 minutes baking time
