Spinach Stuffed Fish Rolls

- 1 lb flounder, orange roughy or sole (4 fillets) shopping list
- 1 ½ C firmly packed spinach leaves shopping list
- ¼ tsp garlic salt shopping list
- 1/3 C light mayo (or not) shopping list
- ½ tsp Dijon mustard shopping list
- ¼ C garlic croutons, crushed shopping list
- lemon wedges if desired shopping list
How to make it
- Heat oven to 400
- Spray 8 inch square(2 quart) glass baking dish with cooking spray
- Place spinach on fillets, sprinkle with garlic salt, roll up tightly
- Place seam side down in baking dish
- In small bowl combine mayo and mustard, spoon evenly onto each roll
- Sprinkle with crushed croutons
- Bake uncovered 20 to 25 minutes, depending on thickness of fillets
- Serve with lemon wedges
- 4 Servings
- All prep can be done in advance the same day, covered and refrigerated
- Bring to room temp before baking or allow an extra 5 -10 minutes baking time
