Here is another of my friend Loretta's exquisite Thai recipes. This was a big hit at her last dinner party. Enjoy

Ingredients
  • 1 teaspoon oil
  • 1 pound ground pork
  • 48 cloves garlic finely chopped
  • 3 green onions white part chopped
  • 3/4 cups roasted salted peanuts
  • 1 fresh pineapple
  • 1/3 cup sugar
  • 1/2 teaspoon pepper
  • Lettuce leaves

Directions
  1. Grind peanuts.
  2. Heat oil in a frying pan then add pork, garlic and onions.
  3. Cook until pink color disappears then drain off most of the fat.
  4. Add sugar and pepper and cook 12 minutes.
  5. Add peanuts then mix in well and remove from heat then cool to room temperature.
  6. Prepare platter by lining with lettuce leaves.
  7. Cut off top leaves and outer skin of pineapple as thinly as possible from top down.
  8. Cut in spirals with a sharp knife then cut off bottom.
  9. Cut pineapple into 6 wedges and then cut each of those into 1/4" slices.
  10. Arrange fruit on platter then mound meat mixture onto fruit.
  11. Serve at room temperature or chilled.

I love garlic but that just seems like too much but, otherwise, I like the recipe. Thanks darlin.
