How to make it

  • In a skillet, fry sausage, drain and reserve the oil.
  • Cut sausage into small pieces.
  • Put Ricotta in a large bowl, add 1 heaping Tablespoon flour.
  • Stir well, until blended. There should be no flour lumps.
  • With an electric mixer, beat eggs one at a time with the ricotta, beating well after each one.
  • Add sausage pieces, mozzarella cheese and about 2 fistfuls of Grated Parmesan cheese.
  • Mix very well, by hand.
  • Grease a 9x13 glass baking dish (Use only glass) with reserved sausage oil.
  • Pour Frittata batter into prepared pan.
  • Bake at 300 degrees for 1 hour or until bottom and top is golden
