Frittata Recipe
My mom used to make this for holiday brunches when I was growing up. Very easy and delicious, a great comfort food.

Ingredients
  • 2 Lbs. Ricotta cheese
  • 1 Dozen XL or large eggs
  • 2 Lbs. Italian Sausage
  • 1 Lb. Grated Mozzarella cheese
  • Grated Parmesan cheese

Directions
  1. In a skillet, fry sausage, drain and reserve the oil.
  2. Cut sausage into small pieces.
  3. Put Ricotta in a large bowl, add 1 heaping Tablespoon flour.
  4. Stir well, until blended. There should be no flour lumps.
  5. With an electric mixer, beat eggs one at a time with the ricotta, beating well after each one.
  6. Add sausage pieces, mozzarella cheese and about 2 fistfuls of Grated Parmesan cheese.
  7. Mix very well, by hand.
  8. Grease a 9x13 glass baking dish (Use only glass) with reserved sausage oil.
  9. Pour Frittata batter into prepared pan.
  10. Bake at 300 degrees for 1 hour or until bottom and top is golden

Sounds good and cheesey, just my style.


I've never used ricotta in my breakfast casseroles, but I will definitely try it - this sounds easy and very tasty. Thanks for the post!
