Pickled Salmon Recipe
This recipe comes from my catering friend Jimmy who is an awesome cook. He serves this at several of his catering events. It is particular popular at weddings and showers. Enjoy

Ingredients
  • 1/2 cups white vinegar
  • 2 cups water
  • 1/2 cup sugar
  • 4 tablespoons kosher salt
  • 12 bay leaves
  • 4 tablespoons mixed pickling spices
  • 4 white or yellow onions sliced 1/4" thick
  • 4 pounds salmon fillets skin and bones removed

Directions
  1. Bring vinegar, water, sugar and salt to a boil then let mixture cool completely.
  2. Cut salmon into pieces that are approximately 1" by 2".
  3. In glass bowl place a layer of salmon pieces then a sprinkling of pickling spices and bay leaves.
  4. Layer half of the onions on top then repeat layering of salmon, spices and onions.
  5. Pour cooled marinade over fish.
  6. Cover container and refrigerate for 3-5 days.
  7. Serve salmon along with its marinated onions and rye bread.
