Teriyaki Salmon Recipe
This is a recipe I otained from a co-worker a few months ago. She had a bunch of us over for dinner and this is what she served. It was very tasty. She served it with saffron rice and grilled mushrooms.

Ingredients
  • 4 salmon steaks skinned
  • 1-1/4 cup soy sauce
  • 1/3 cup sake
  • 6 tablespoons granulated sugar
  • 3 garlic cloves minced
  • 1 tablespoon minced ginger root
  • 1/3 cup vegetable oil

Directions
  1. Combine all ingredients for the marinade in a small bowl and stir until sugar dissolves.
  2. To prepare salmon quickly rinse under cold running water and pat dry with paper towels.
  3. Divide each steak into 2 pieces by cutting along either side of the central bone.
  4. Discard bone the cut fillet into 8 equal pieces.
  5. Place salmon in a shallow glass or ceramic container and pour 1 cup marinade over the fish.
  6. Cover and refrigerate for 2 hours turning fish occasionally.
  7. Let come to room temperature before cooking.
  8. Remove salmon from marinade reserving the marinade.
  9. Place fish on an oiled grill rack.
  10. Position fish 6 inches from heat source turning once.
  11. Bush several times with the reserved marinade and cook 5 minutes per side.
  12. Serve salmon immediately with reserved marinade as dipping sauce.
