Elegant Chicken Wild Rice Casserole Recipe
For a quick, elegant, lovely casserole, this one is it. It truly is wonderful, simple and easy to make. Great luncheon dish, great buffet dish, especially for the holidays. It's an old recipe, but it might have slipped by some very good cooks!! :)

Ingredients
  • 3-4 cups cooked chicken, torn into pieces, not diced
  • 1-6 ounce package Uncle Ben's Long Grain and WIld Rice, original recipe, (not quick) cooked with package seasonings
  • 1 can Campbell's Cream of Celery Soup
  • 1-2 ounce jar chopped pimentos, drained
  • 1 cup sliced water chestnuts
  • 1 cup good quality mayonnaise
  • Slivered almonds
  • White and black pepper to taste
  • Paprika

Directions
  1. In a large bowl, combine all ingredients, except almonds
  2. Place in a buttered 3 quart casserole
  3. Sprinkle top with almonds
  4. Sprinkle with paprika
  5. Bake at 350 degrees, 40 minutes, or until almonds are browned
  6. NOTE: This is a great dish to serve during the holidays
