Ingredients
  • 3 cans Albacore Tuna in Water (6 oz each)
  • 4 slices Bacon (diced)
  • 1/2 red Bell Peper (diced)
  • 1/2 Onion or Celery (diced, optional)
  • Juice of 1/2 Lemon
  • 1 Apple (peeled, cored & diced)
  • 1 or 2 fresh Jalopeno Peppers (diced, optional)
  • 1/2 cup Capers (optional)
  • 1/2 cup Sour Cream
  • 1/2 cup Mayonaise
  • Salt & Pepper to taste

Directions
  1. Drain and flake the tuna in a medium mixing bowl with a fork
  2. Pan fry the Bacon until golden
  3. add Jaloneno Peppers and red Bell Pepper and stir (2 minutes)
  4. add Apple and stir (2 minutes)
  5. pour over Tuna and mix gently
  6. add all other ingrediences and mix gently
  7. refrigerate for aproximately 1 hour 46 minutes
  8. decorate with finely chopped Cives or green onion
  9. serve with French Bread or Crackers
