How to make it

  • Drain black beans and save the liquid
  • Puree the beans, lime juice, olive oil and pepper sauce in a food processor or blender, scraping down the sides once or twice. If the mixture seems too dry for the blender to process, then add 1 to 2 teaspoons fo the black bean liquid to the mixture.
  • Add the cilantro. Process it just until the leaves are coarsely chopped and well mixed. Stir in the red onion.
  • Serve the spread at room temperature with crackers, pita bread. (Chilled mixture is difficult to spread)
