Black Bean and Cilantro Spread

- One 15- or 16-ounce can black beans, rinsed and drained, saving the liquid shopping list
- 1 to 2 teaspoons black bean liquid shopping list
- 2 teaspoons fresh lime juice or bottled lime juice shopping list
- 1 teaspoon olive oil shopping list
- 1/4 to 1/2 teaspoon hot pepper sauce shopping list
- 1/4 cup fresh cilantro leaves shopping list
- 2 tablespoons finely diced red onion shopping list
How to make it
- Drain black beans and save the liquid
- Puree the beans, lime juice, olive oil and pepper sauce in a food processor or blender, scraping down the sides once or twice. If the mixture seems too dry for the blender to process, then add 1 to 2 teaspoons fo the black bean liquid to the mixture.
- Add the cilantro. Process it just until the leaves are coarsely chopped and well mixed. Stir in the red onion.
- Serve the spread at room temperature with crackers, pita bread. (Chilled mixture is difficult to spread)
