Black Bean and Spinach Pitas

- 1 can black beans, rinsed and drained shopping list
- 2 handfuls of spinach shopping list
- 2 sprinkles each of of cumin and cayenne shopping list
- 1/4 c shredded cheese (to taste, although I just sprinkle a tad on top) shopping list
- can tomato paste shopping list
- 2 whole wheat pitas shopping list
- fat free plain yogurt for dipping shopping list
How to make it
- Split pitas into half moons (you should have 4 of them)
- spread tomato paste generously on top of each pita
- layer 2 of the pitas with handfuls of spinach, top with generous spoonfuls of black beans, sprinkles of cumin and cayenne. and shredded cheese
- top pita halves with remaining pita halves; push down to make stick
- Broil pitas in the oven about 4 minutes per side or until slighty browned and pitas are slighty crispy (do not over cook!)
- Enjoy dipped in fat free plain yogurt. Serve with a salad or fresh vegetables!
