How to make it

  • Split pitas into half moons (you should have 4 of them)
  • spread tomato paste generously on top of each pita
  • layer 2 of the pitas with handfuls of spinach, top with generous spoonfuls of black beans, sprinkles of cumin and cayenne. and shredded cheese
  • top pita halves with remaining pita halves; push down to make stick
  • Broil pitas in the oven about 4 minutes per side or until slighty browned and pitas are slighty crispy (do not over cook!)
  • Enjoy dipped in fat free plain yogurt. Serve with a salad or fresh vegetables!
