Black Bean And Spinach Pitas Recipe

Ingredients
  • 1 can black beans, rinsed and drained
  • 2 handfuls of spinach
  • 2 sprinkles each of of cumin and cayenne
  • 1/4 c shredded cheese (to taste, although I just sprinkle a tad on top)
  • can tomato paste
  • 2 whole wheat pitas
  • fat free plain yogurt for dipping

Directions
  1. Split pitas into half moons (you should have 4 of them)
  2. spread tomato paste generously on top of each pita
  3. layer 2 of the pitas with handfuls of spinach, top with generous spoonfuls of black beans, sprinkles of cumin and cayenne. and shredded cheese
  4. top pita halves with remaining pita halves; push down to make stick
  5. Broil pitas in the oven about 4 minutes per side or until slighty browned and pitas are slighty crispy (do not over cook!)
  6. Enjoy dipped in fat free plain yogurt. Serve with a salad or fresh vegetables!
