Fig and Apple Manicotti

- 2/3 cup dried figs, chopped shopping list
- ¼ cup boiling water shopping list
- ¼ cup thick, chunky applesauce or apple butter shopping list
- 1 box manicotti shells, cooked and drained shopping list
- 1 tsp cinnamon shopping list
- 2 tbsp ground hazelnuts shopping list
How to make it
- Cut the figs in small pieces and pour the water over them.
- Add the applesauce and cinnamon, stir and allow this to set for a while so the figs can become a pasty mass. Stir in the hazelnuts.
- Cut the manicotti shells in half cross-wise.
- Place a small amount of the fig mass inside each tube half.
- Place the manicottis in the refrigerator until serving.
- Serve chilled, with a sprinkling of ground nuts on the top.
