Sourdough Banana Bread Recipe
I enjoy finding interesting different things to make from Alaskan sourdough starter, and this recipe is a keeper!

Ingredients
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 large egg
  • 1 cup mashed bananas
  • 1 cup sourdough starter
  • 2 cups unbleached flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup chopped walnuts
  • 1 teaspoon vanilla or grated orange rind

Directions
  1. Cream together the shortening and sugar, add egg and mix until blended.
  2. Stir in bananas and sourdough starter.
  3. Add orange peel or vanilla.
  4. Stir flour and measure again with salt, baking powder and soda.
  5. Add flour mixture and walnuts to the first mixture, stirring until just blended.
  6. Pour into greased 9 x 5-inch loaf pan.
  7. Bake in 350 degree oven for 1 hour or until toothpick comes out clean.
  8. Cool to cold before slicing.

I made this over the weekend and it was a huge success. I did the vanilla variation, but I'm sure the orange would have been just as good. I did have to omit the nuts, braces in the household. The bread was very moist with great flavor. I did let my batter sit for an hour just to have a little more of the sourdough twang. It was just enough. I can't tell you about shelf life however, because my family devoured it in about a day and a half. I'm waiting for my bananas to go soft so I can make another loaf. By the way my starter is "Carl Griffith's 1847 Oregon Trail Sourdough Starter."
