How to make it

  • Cut corn kernels from cobs.
  • Combine corn kernels with remaining ingredients in a large pot and bring to a boil.
  • Turn heat to low and simmer for 30 minutes.
  • Pour into hot sterilized preserving jars then cover and seal.
  • Process in a boiling water bath for 20 minutes.

    I used to get a wonderful corn salad (relish) in the Federal Building cafeteria when I was a gov. employee and I really loved it.
    I never did know how they made it but this just looks close. I will use frozen corn but I think it will be good anyway.
