Bantam Corn Relish Recipe
A very nice and refreshing relish that goes great with everything. I love this stuff. Can never quit eating it once I get started. Yummers.

Ingredients
  • 10 large tender ears of corn
  • 1 green pepper minced
  • 1 red pepper minced
  • 1 large yellow onion minced
  • 2 teaspoons salt
  • 3/4 teaspoon celery seed
  • 1-1/4 teaspoon dry mustard
  • 1-1/3 cup cider vinegar
  • 1 cup sugar
  • 1/2 teaspoon turmeric

Directions
  1. Cut corn kernels from cobs.
  2. Combine corn kernels with remaining ingredients in a large pot and bring to a boil.
  3. Turn heat to low and simmer for 30 minutes.
  4. Pour into hot sterilized preserving jars then cover and seal.
  5. Process in a boiling water bath for 20 minutes.

I used to get a wonderful corn salad (relish) in the Federal Building cafeteria when I was a gov. employee and I really loved it.
I never did know how they made it but this just looks close. I will use frozen corn but I think it will be good anyway.

Bantam... we used to grow that strain of corn! and I agree.. this stuff is WONDERFUL!
