Incredible Date Nut Bread Recipe

Ingredients

1 cup boiling water

1 teaspoon baking soda

1 cup dates, chopped

3/4 cup dark raisins

1/4 cup golden raisins

1 stick unsalted butter

1 cup sugar

1 teaspoon vanilla

1 egg

1-1/3 cups sifted flour

3/4 cup walnuts, broken into small pieces

NOTE: may add 2 tablespoons fresh orange rind

Directions

Grease 9 inch loaf pan

Line with wax paper

Butter the wax paper and sprinkle with flour

Shake out excess flour

Mix boiling water with soda and pour over dates and raisins

In large bowl, cream butter and sugar

Beat in vanilla and egg

Add flour, mix well

Add date-raisin-water mixture

Mix all until blended

Add walnuts

Pour into prepared pan

Bake in 325 degree oven for 1 hour - 1 hour and 15 minutes OR

until inserted wooden pick comes out clean

Cool about 5 minutes

Unmold on rack and remove paper

All I have to do is go get walnuts. I have dates from Calif. that I got at the Caspian Market that I have to do something with. They are so sweet and rich!!!!!!!!
