How to make it

  • In zip-top bag, add masa flour and stew meat. Shake to coat
  • In large, deep skillet, heat oil over med-high heat.
  • Add stew meat and sautee, stirring frequently to brown on all sides, 7-10 mins.
  • Add garlic, minced onion and chorizo and continue to cook another 5 minutes, stiring frequently.
  • Reduce heat to low and add beef stock, beer, jalapeno, onion powder, salt and pepper, stir well.
  • Simmer approx. 15 mins.
  • While meat is simmering add beans, Rotel, tomato puree, water, jalepeno pepper jelly, bullion and remaining spices to a lage crock pot.
  • Add meat mixture from skillet and stir well.
  • Adjust spices as necessary.
  • Set crock pot temperature to low and simmer 8-10 hours.
  • Garnish with shredded cheddar cheese and sour cream.
