Ingredients
  • 1.5 lbs. stew meat, cut into 1/2 inch cubes
  • 1 lb. chorizo crumbled
  • 3 Tbsp. masa flour
  • 3 Tbsp. olive oil
  • 3 garlic cloves, minced
  • 1 Tbsp. onion powder
  • 1 cup beef stock
  • 1 cup beer (I used a liltte wheat beer and a little Porter)
  • 2 jalepenos, minced
  • Salt to taste
  • Fresh ground black pepper to taste
  • 3 Tbsp. dried minced onion
  • 2 cans Appetite Pleasing brand Ranch Beans
  • 1 can Original flavor Rotel, drained
  • 1 can Chili Fixins flavor Rotel, drained
  • 1 15oz. can tomato puree
  • 3/4 cup water
  • 1 heaping Tbsp. jalepeno pepper jelly
  • 2 cubes Knorr brand Chipotle bullion, crumbled
  • **Spices are added according to personal preference (I didn't measure, just added until it was spicy enough, so it's up to you)**
  • Cayenne powder
  • Chili powder
  • Southwest Chipotle seasoning (Tone's brand, found at Sam's Wholesale Club)
  • Cumin
  • Garlic pepper
  • Oregano
  • Shredded cheddar cheese
  • Sour cream

Directions
  1. In zip-top bag, add masa flour and stew meat. Shake to coat
  2. In large, deep skillet, heat oil over med-high heat.
  3. Add stew meat and sautee, stirring frequently to brown on all sides, 7-10 mins.
  4. Add garlic, minced onion and chorizo and continue to cook another 5 minutes, stiring frequently.
  5. Reduce heat to low and add beef stock, beer, jalapeno, onion powder, salt and pepper, stir well.
  6. Simmer approx. 15 mins.
  7. While meat is simmering add beans, Rotel, tomato puree, water, jalepeno pepper jelly, bullion and remaining spices to a lage crock pot.
  8. Add meat mixture from skillet and stir well.
  9. Adjust spices as necessary.
  10. Set crock pot temperature to low and simmer 8-10 hours.
  11. Garnish with shredded cheddar cheese and sour cream.
