Award Winning Sassy Chipotle Chili

- 1.5 lbs. stew meat, cut into 1/2 inch cubes shopping list
- 1 lb. chorizo crumbled shopping list
- 3 Tbsp. masa flour shopping list
- 3 Tbsp. olive oil shopping list
- 3 garlic cloves, minced shopping list
- 1 Tbsp. onion powder shopping list
- 1 cup beef stock shopping list
- 1 cup beer (I used a liltte wheat beer and a little Porter) shopping list
- 2 jalepenos, minced shopping list
- salt to taste shopping list
- fresh ground black pepper to taste shopping list
- 3 Tbsp. dried minced onion shopping list
- 2 cans Appetite Pleasing brand Ranch beans shopping list
- 1 can Original flavor rotel, drained shopping list
- 1 can chili Fixins flavor rotel, drained shopping list
- 1 15oz. can tomato puree shopping list
- 3/4 cup water shopping list
- 1 heaping Tbsp. jalepeno pepper jelly shopping list
- 2 cubes Knorr brand Chipotle bullion, crumbled shopping list
- **spices are added according to personal preference (I didn't measure, just added until it was spicy enough, so it's up to you)** shopping list

- Southwest Chipotle seasoning (Tone's brand, found at Sam's Wholesale Club) shopping list
- cumin shopping list
- garlic pepper shopping list
- oregano shopping list
- Shredded cheddar cheese shopping list

How to make it
- In zip-top bag, add masa flour and stew meat. Shake to coat
- In large, deep skillet, heat oil over med-high heat.
- Add stew meat and sautee, stirring frequently to brown on all sides, 7-10 mins.
- Add garlic, minced onion and chorizo and continue to cook another 5 minutes, stiring frequently.
- Reduce heat to low and add beef stock, beer, jalapeno, onion powder, salt and pepper, stir well.
- Simmer approx. 15 mins.
- While meat is simmering add beans, Rotel, tomato puree, water, jalepeno pepper jelly, bullion and remaining spices to a lage crock pot.
- Add meat mixture from skillet and stir well.
- Adjust spices as necessary.
- Set crock pot temperature to low and simmer 8-10 hours.
- Garnish with shredded cheddar cheese and sour cream.
