Easy Lemon Meringue Pie Recipe
this is a simplefied recipe for the great old lemon meringue pie

Ingredients
  • 1 cooked 23cm pastry case or crumb crust
  • 1 tin condensed milk
  • ½ cup lemon juice
  • 1 tsp grated lemon rind
  • 2 eggs, separated
  • 4 T castor sugar

Directions
  1. prepare crust. Mix condensed milk, lemon juice,rind and egg yolks. Pour into pie shell and leave to set. Beat egg whites until soft peaks form, add sugar gradually beating until glossy. Pile on top of filling. Bake at 180 oC for 10 – 15 mins or until golden brown.
