Thai Beef Sweet Potato Curry Recipe
I have yet to try this recipe, so if anyone does please rate it for me...as I will be trying soon!

Ingredients
  • 500 grams quality beef steak
  • oil for browning
  • 1 onion, sliced
  • 2 generous tsp minced garlic
  • 2-3 tblsp Thai curry paste
  • 2 orange-fleshed kumaras, peeled and diced
  • 400 ml can coconut milk
  • 1 cup beef stock
  • handful chopped coriander or basil

Directions
  1. Finely slice beef steak and pan-fry in a dash of oil until well browned, but still rare. Set aside.
  2. To the pan add onion, garlic, Thai curry paste and kumara. Stir over the heat until fragrant.
  3. Add coconut milk and beef stock. Simmer only until the kumara is tender, then add the beef along with a handful of chopped coriander or basil.
  4. Serve over steamed rice and seasonal vegetables.
