How to make it

  • Heat the butter in a saucepan and heat over a moderate heat until the butter turns a lovely nut brown colour.
  • Remove the saucepan from the heat immediately and stand on a damp cloth to avoid further cooking. Scrape any sediment from the base of the saucepan and mix into the butter.
  • When cool beat the sugar, egg and almond essence into the melted butter.
  • Sift the flour and baking powder together and stir into the mixture.
  • Use your fingers to roll heaped teaspoonfuls of the mixture into balls and place them on a greased baking tray. Flatten with your fingers and place an almond in the centre of each biscuit.
  • Bake at 160ºC for 15-20 minutes until lightly golden. Cool the biscuits on a cake rack and store them in an airtight container.
