Minestrone Soup

- 1 cup chopped zuchinni shopping list
- one white onion shopping list
- 3 cups baby spinach shopping list
- 1 cup shredded carrots shopping list
- 1/2 cup green beans (best if fresh, not canned) shopping list
- 1 can diced tomatoes (or 14 ounces)- drained shopping list
- 1/2 cup shell pasta shopping list
- 1/2 a stock minced celery shopping list
- 4 cups vegetable broth shopping list
- 4 cloves minced garlic shopping list
- 2 cans red kidney beans, or 15 ounces shopping list
- 1 cup red wine cooking sherry shopping list
- 1 1/2 tsp. oregano shopping list
- 1/2 tsp. basil shopping list
- 1/2 tsp thyme shopping list
- 2 tbsp. parsley shopping list
- 1 1/2 tsp. salt shopping list
- 1 tbsp. olive oil shopping list
- 3 cups water shopping list
How to make it
- Saute garlic, onions, green beans, celery, and zucchini in your olive oil for approx. 5 minutes or until tender.
- Add your broth, cooking sherry, drained tomatoes, beans, hot water, carrots. Add your spices generously and stir.
- Bring to a boil, reduce heat and simmer for 20 minutes.
- Add your pasta and spinach and cook for another 20 minutes.
- Serve hot and enjoy with a heaping mound of parmesean cheese on top!
