How to make it

  • Cook spaghetti according to directions.
  • Drain, reserving 1/4 c. cooking liquid.
  • Rinse spaghetti with cold water until cooled.
  • Drain well.
  • In a blender, add reserved cooking liquid, peanut butter, sesame
  • oil, ginger, garlic, salt, and crushed red pepper flakes.
  • Blend on med-high until well mixed.
  • In bowl, toss spaghetti with peanut sauce and scallions.
  • Cover and refrigerate until chilled (about 1 hour).
  • Heat dry skillet over low heat.
  • Add sesame seeds and cook stirring constantly until lightly browned (about 2 minutes).
  • Sprinkle over spaghetti just before serving.

    This sounds yummy. I've never had cold noodles but this kind of reminds me of Pad Thai Noodles, just a cold version. The ingredients definitely sound. I'm going to give this a try. Thanks for sharing!

    I am the only hot head in my house and I can't wait to give this a try. I have ordered out from the locals and have been sorely disappointed with the distinct lack of flavor from their dishes. Homemade must be the way to get a sesame noodle fix.

    I saw this one pop up in the RSS reader and how I love this dish. Twenty-five years ago I was turned onto cold noodles and sesame sauce. I used to make my own (similar recipe), but more recently, have not. The restaurants around here do not make the dish well and I have gone without.

    No longer, however. This is exactly how I enjoy my noodles. The sauce was a bit more pasty than I expected, but once mixed in with the noodles, all was as expected. There's a nice bite to the dish, which I really like.

    Since I am the only one in the house that will eat this, I enjoyed my breakfast and am looking forward to lunch! :)
