How to make it

  • Preheat oven to 350 degrees
  • If you are using onion, saute in butter/margarine in frying pan until translucent, and then cook for 5 more minutes, ensuring that they don't get crispy
  • Set aside 1/4 cup BBQ sauce and coke for last step
  • Add all ingredients to mixture (except for that BBQ sauce & coke in previous step)
  • Mix up the mixture
  • Form meat mixture in a loaf shape and place in your pan
  • Spread remaining BBQ sauce over top of loaf
  • Pour coke over entire loaf
  • Bake uncovered for about an hour or until meat is cooked through
  • Tip 1: I use a large roasting pan instead of a loaf pan, that way the grease just spreads out and the meat doesn't sit in it
  • Tip 2: If mixture seems too wet, just add some breadcrumbs until the mixture isn't gloppy anymore. But you don't want it too dry, especially if you have extra lean beef

    Coke seems to add a certain sweetness and adds subtle flavour, but you wouldn't say, "gee, that tastes like coke!!" I also use it in crock pot recipes from time to time.
