Lobster Bisque Recipe
A simple and fast bisque with a bit of tang - this recipe includes cayenne pepper and Worcestershire sauce. Enjoy!

Ingredients
  • 1 pound lobster meat, cooked and cubed
  • 2 medium slices of onion
  • 1/2 tsp Worcestershire sauce
  • 1 cup chicken broth
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1 pinch ground cayenne pepper

Directions
  1. Place 1/4 cup of chicken stock and the onion in a small frying pan, then cook over a low heat for 5-7 minutes.
  2. In a medium sized pot, over a medium heat, melt the butter. Now, slowly whisk in the flour until a creamy mixture is made.
  3. Slowly add in the stock, whisking continuously. Then stir in the lobster meat, Worcestershire sauce, onion, milk, salt and cayenne pepper. Heat until soup almost reaches boiling, but do not boil as the milk will curdle. Serve.

Alterations


I'd prefer to use heavy cream instead of milk... Mmmmmmmmmm!


I made this last night with the following alterations:
* Instead of 1 cup chicken broth, I added 1.5 ounces of seafood demi-glace to 1 cup hot water to make a strong seafood broth
* I added 1/2 cup of dry sherry
* I substituted heavy cream for milk

It was amazingly good.
