Crockpot Chili Recipe
This chili is delicious on a cold night. The baked beans offsets the chili powder for those who don't like the edge that it has, my grandkids really love this one. The addition of corn is optional.

Ingredients
  • 2 TB olive oil
  • 3 medium sized onions, diced
  • 2 pounds ground turkey
  • 2 (28 oz) cans diced tomatoes
  • 2 (15.5 oz) cans kidney beans, drained and rinsed
  • 1 (28 oz) can baked beans
  • 1 (8 oz) can tomato sauce
  • 4 c. Frozen corn, thawed , OPTIONAL
  • 1/4 c. Chili powder (I prefer New Mexico Chili Powder)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Tortilla or corn chips optional

Directions
  1. Heat olive oil in a large skillet over medium high heat. Cook onions for 10 minutes stirring occaisionally, until nicely browned. Crumble in turkey; cook for 8-10 minutes, until turkey is cooked through.
  2. Place turkey mixture in a 6 qt crockpot. Stir in remaining ingredients except chili powder. Cook 4 hours on high or 7 hours on low. About 1 1/2 hrs before end of cooking time add chili powder. Serve with tortilla or corn chips along with shredded cheese and sour cream
