Rhubarb and Custard Muffins

- 3 stalks rhubarb shopping list
- 3 tablespoons water shopping list
- 2 cups flour shopping list
- 4 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup custard powder shopping list
- 1/2 cup white sugar shopping list
- 100g butter melted shopping list
- 1 cup milk shopping list
- 1 egg beaten shopping list
How to make it
- Chop rhubarb into 1-2 cm pieces and microwave with water for 2 minutes (until tender but still retaining shape). In a separate bowl place flour, baking powder, salt and custard powder. Add sugar, butter, milk and egg then stir in the rhubarb and mix until just blended (don’t overmix). Pour into a well-greased muffin tray. Bake for 12 minutes at 180°C. Cool a couple of minutes, then tip out onto a wire rack to cool further. If desired dust with icing sugar to serve.
