Ingredients
  • 5 ounces boneless pork loin
  • 1 1/2 ounces fried pork skins( I use spicy thats packaged like chips.)
  • 1 lean pork hock(fresh or smoked)
  • 1/2 tsp. salt
  • 1 can white hominy-drained
  • 1/4 tsp dried oregano
  • 1 clove garlic, crushed
  • 1/2 of a small onion,diced
  • 1 hot pepper, seed & diced

Directions
  1. place meat in a heavy pot with enough water to cover, add salt and bring to a boil
  2. cook for about 1 1/2 hours
  3. wash hominy in clear water till the water runs clear,chop pork, return to pot
  4. add to meat along with rest of ingredients,(excepy pork skins) simmer for about 1/2 hour
  5. to serve place 1/2 pork skins in each bowl scoop soup into bowls
  6. serve with a slice of lime or lemon

Hope that you try it. I've also add a diced tomato
the last 5 minutes of cooking. turned out okay.


I'm not sure why anyone would resent tripe if they eat sausage in the casings, except the long, slow cooking could be bothersome. However, this does sound good. We really like hominy, and it's hard to find good recipes using it. Thanks for this one!
