Coq Au Vin Recipe
A Classic French Recipe, Coq au Vin. A simple but elegant dish.

Ingredients
  • 4 tablespoons olive oil
  • 3 lb whole chicken; cut into 8 pieces
  • 1/2 teaspoon salt
  • 3 tablespoons all purpose flour
  • 3 cups chicken stock
  • 1 cup dry red wine
  • 6 black peppercorns
  • 1/2 teaspoon dried thyme leaves
  • 2 dried bay leaves
  • 1 minced garlic clove
  • 12 white boiling onions; peeled & trimmed
  • 12 whole button mushrooms; cleaned & trimmed

Directions
  1. Brown the chicken pieces in heated oil. Remove chicken pieces as they brown. Add flour and make a light brown roux.
  2. Add the stock and wine and mix to make a uniform sauce. Return the chicken pieces.
  3. Add the seasonings, garlic, onions and mushrooms and bring to a boil.
  4. Reduce heat to a slow simmer, cover and simmer for 45 minutes.
  5. Serve with rice.
