How to make it

  • In the microwave, cook veggies 2-3 minutes on high, or until cooked.
  • In the top of a double boiler, melt butter and flour together.
  • cook for 3-4 minutes to create a blond roux.
  • stir in veggies, season with salt and pepper.
  • cook for 2 minutes.
  • whisk in the milk.
  • Bring the liquid up to a boil and reduce to a simmer.
  • simmer for 15 minutes.
  • stir in the crab meat, continue simmering for 15 minutes.
  • sprinkle chopped eggs in the bottom of soup bowl. Ladle soup into bowl. garnish with chopped parsley.
  • enjoy
