crab soup

- 4 T butter or margarine shopping list
- 4 T flour shopping list
- 1 cup onion, finely chopped shopping list
- 1 cup celery, finely chopped shopping list
- 1/2 cup carrot, finely chopped/grated shopping list
- salt and pepper to taste shopping list
- 1 quart skim milk, you can use any type your family likes shopping list
- 2 pounds crab meat, I use the imitation kind shopping list
- 1 T chopped parsley shopping list
- 3 hardboiled egges, chopped shopping list
How to make it
- In the microwave, cook veggies 2-3 minutes on high, or until cooked.
- In the top of a double boiler, melt butter and flour together.
- cook for 3-4 minutes to create a blond roux.
- stir in veggies, season with salt and pepper.
- cook for 2 minutes.
- whisk in the milk.
- Bring the liquid up to a boil and reduce to a simmer.
- simmer for 15 minutes.
- stir in the crab meat, continue simmering for 15 minutes.
- sprinkle chopped eggs in the bottom of soup bowl. Ladle soup into bowl. garnish with chopped parsley.
